This comforting soup is excellent on cold nights and makes and reheats well.

Ingredients
- Bacon
- Half of One White Onion
- 5-8 pieces of Garlic
- 3 tbsp of Flour
- 4 cans of Chicken Broth
- 4-6 Potatoes
- Sharp Cheddar
- Green Onions
- 2/3 cup of Heavy Cream
- Sour Cream

- Large Pot
- 2 Cutting Boards
- 2 Knifes
- Cheese Grater
- Spoon
- Wooden Spoon
- Potato Peeler
- Begin by cutting your bacon into small pieces using your cutting board and knife then set aside.
- the using your other knife and cutting board cut your white onion in half.
- Then cut your onion into small 1 centimeter pieces then set aside.
- Using the same cutting board dice your 5-8 pieces garlic into small pieces.
- Then put your large pot on medium heat then add your bacon.
- Allow you bacon to cook while string with your wooden spoon, making sure the bacon dosent clump.
- After bacon has finished cooking transfer to a plate with a paper towel on it; leave bacon fat in pot.
- Throw in your onions and cook till transluscent then add your garlic took till done.
- Then add in 3 tbsp of flour; Allow to cook for 2-3 minutes.
- As they cook open you chicken broth cans then add into pot; stir till mixed in.
- As you bring your pot to a boil; Peel your potatoes.
- Then using the cutting board you used for you onion and garlic cut your potatoes into 1 inch cubes then, add your potatoes into pot.
- Your potatoes will be done when a fork can pierce them with minimal pressure; as they cook begin to grate your cheese.
- Grate your 2 cups of cheese then out to the side.
- Using the vegetable cutting board cut you green onion into small pieces and put to the side.
- Once you potatoes are done, put on medium heat, add your heavy cream and mix.
- Slowly add one cup of your cheese and mix in.
- To serve in your bowl place you soup, more cheese, bacon, then a dollop of sour cream, and Green onions on top.
- Then serve.
